Simple recipes for (not so) simple times.

500g Kumquats
2 inch Ginger, skin on, very thinly sliced
2 cups sugar
1 cup water
Sugar and water in pan, bring to simmer. Add kumquats and ginger, low simmer for 20 mins – or until fruits softened, but whole. Remove fruits from sugar water and continue simmering until reduced to a syrup consistency (if you don’t know what that looks like, figure it out). Add kumquats back to syrup, let cool in pan. Serve with pork or cheese or porridge or ice cream or whatever you bloody want.
